Ingredients

Divide two tablespoons of olive oil into equal parts.

Two large eggs, beaten

Two cloves garlic, minced

One small onion diced

8 ounces of mushrooms, sliced

One head of broccoli, cut into florets

One zucchini, chopped

Half a cup of frozen corn

Half a cup of frozen peas

Peel and grate two carrots

3 cups cooked quinoa

Fresh ginger grated to 1 tablespoon

Three tablespoons soy sauce

Green onions, two slices

Sriracha is used for serving.

Instructions

In a medium-sized skillet, heat one tablespoon of olive oil on low heat. Fry eggs until they are cooked through. This will take about 2-3 minutes on each side. Flip only once. Let cool before dicing into small pieces.

In a large wok or skillet, heat the remaining one tablespoon of olive oil over medium-high heat. Add the garlic and onion and frequently stir until the onions are translucent (about 4-5 minutes).

Add mushrooms, broccoli, and zucchini. Stir constantly until vegetables are cooked, approximately 3-4 minutes.

Add carrots, quinoa, corn and peas. Stir constantly while cooking until heated, approximately 1-2 minutes.

Stir gently to combine. Cook with constant stirring until heated, approximately 2 minutes.

Add green onions and the eggs.

If desired, drizzle with Sriracha and serve immediately.
