Looking for something simple and delicious to cook on the BBQ this summer? Then this Greek Marinated Chicken is it.
The marinade used for this chicken (similar to the one I used in the chicken Shawarma ) takes just two minutes to mix and produces a blast of flavor. It’s incredible. It’s amazing. I marinated my chicken in this amazing blend for 30 minutes; however, the taste was incredibly strong and evident. After marinating, you can grill the chicken outdoors on a charcoal or gas flame and (if the grill isn’t available) bake it on the stove. In either case, you’ll have an extremely flavorful and moist product at the end.
The dish I made was Greek Marinated Chicken with my lemony Cucumber, as well as Couscous Salad, which was a great cold summer meal that incorporated both vegetables and starches. Two birds, one stone!
INGREDIENTS
1 cup plain Yogurt ($0.63)
2 tablespoons olive oil($0.32)
Four cloves of garlic, chopped ($0.32)
1/2 TBSP dried oregano ($0.08)
1-medium lemon ($0.49)
1/2 tsp salt ($0.02)
fresh cracked pepper($0.05)
1/4 bunch of fresh parsley ($0.20)
Between 3 and 4 pounds of chicken pieces ($6.86)
INSTRUCTIONS
To prepare the marinade, mix the yogurt, olive oil, minced garlic oregano, salt, and some fresh cracked pepper into the bowl. Use a cheese with a hole that is fine-grated or zester to scrape the fine strip of lemon zest off the skin of the lemon to the dish. In addition, add the juice of one-half of the lemon (about 1 – 2 Tbsp). Mix until the ingredients are thoroughly mixed. Cut up a large handful, or approximately 1/4 bunch of parsley, and mix in the marinade.
Place the pieces of chicken as well as marinade into a gallon-sized zip-top bag. As the air as you can, seal the bag, and then gently massage the bag to mix in the contents. Ensure that the chicken is thoroughly coated. Keep the bag in the fridge for 30 minutes.
After 30 minutes of marinating or so, grill the chicken a grill, or prepare the oven for baking at 350 degrees before you cook the chicken.
In order to bake your chicken, put the pieces of chicken into a pan (9×13). The chicken is baked in a preheated oven at 375 degrees for 45-60 minutes or until the chicken is golden brown on top.
