When I have leftover rotisserie hen from this, I use it to make my favorite Chinese Chicken Salad. This is a restaurant-quality dish that tastes even better at home.

The best wonton strips are packed with romaine lettuce and napa cabbage. Also included are mandarin oranges. Homemade is better than anything you can buy in the store.

The sesame-ginger dressing is a perfect match. You can make the dressing ahead and store it in the refrigerator before serving. You can eat all of the wonton pieces while preparing.

Ingredients

One head of romaine shredded

Four cups of shredded napa lettuce

Rotisserie chicken 3 cups of leftover shredded

1 (15-ounce) can of mandarin oranges, drained

Fresh cilantro leaves chopped to a 1/2 cup

Half a cup of roasted salted Cashews

Green onions, thinly cut into 3

Two cups of crispy wonton strip, homemade.

Sesame seeds toasted two teaspoons

SAME GINGER DRESSING

1/4 cup rice vinegar

Three tablespoons of orange marmalade

Canola oil, 2 1/2 tablespoons

Two and a half tablespoons of toasted sesame oils

Reduced sodium soy sauce, one tablespoon

Ginger freshly grated to 2 teaspoons

Sesame seeds toasted two teaspoons

To taste, add Kosher Salt and freshly ground Black Pepper

Instructions

Place romaine lettuce into a large serving bowl. Top with chicken, oranges, mandarins, cilantro, cashews, and green onions. Pour the sesame-ginger dressing over the salad and gently mix to combine.

Serve immediately, topping with wonton stripes and sesame seeds.

FOR THE SAME GINGER DRESSING

In a small dish, whisk together the rice vinegar, orange marmalade, sesame seed oil, canola, soy, and ginger. Season with salt and pepper to taste.
