Okay, this tiny treasure deserves to be featured in a post rather than buried inside this Chili lime shrimp bowls recipe page. This simple pineapple salsa tastes so tasty that I could take it all out of the bowl (and I did when I prepared the Shrimp Bowls!). It’s straightforward and adaptable. It can flavor fish, chicken tortillas, burritos, or quesadillas. Dishes… The possibilities are endless. It can be stored in the fridge for 3 to 4 days, but it most likely won’t last very long!

SHOULD I USE FRESH OR CANNED PINEAPPLE?

This recipe can be made with fresh Pineapple that is in season and is on sale, and you can also make it with canned Pineapple in the off-season. It’s better to use fresh Pineapple. However, it’s important to note that the cilantro, lime, and red onion are all enough freshness to make this simple pineapple salsa stand out, even if you’re using canned Pineapple.

WHAT TO SERVE WITH PINEAPPLE SALSA

This pineapple salsa is a fantastic sweet and spicy chip dip, and you can pour it over various food items! It’s excellent for Coconut Jerk Peas or green Chile chicken Enchiladas, Roasted Cauliflower Taco Bowls, Cilantro Lime Chicken, or Sweet Potato Tacos.

INGREDIENTS

2 cups of chopped Pineapple* ($0.67)

1/4 onion red ($0.17)

One jalapeno (optional) ($0.11)

One lime ($0.34)

1/4 bunch cilantro ($0.21)

One teaspoon salt ($0.05)

INSTRUCTIONS

Cut the Pineapple into smaller pieces. If you’re using canned Pineapple, remove it from the can before you chop. You can use the juice to make smoothies, marinades, or other things. Place the diced Pineapple in an ice cube.

Finely chop the red onion before adding it to the dish. Get rid of the seeds in the jalapeno first by trimming off its stem and before cutting it into two pieces lengthwise. Scrape out the seeds using a spoon, and then chop the pepper finely. Add the jalapeno to the bowl.

Clean and shake off as much of the water from the cilantro as you can. Take the leaves off the stems, then roughly chop them. Chop the cilantro and add it to the bowl. Inject the juice of a lime into the bowl. Mix everything up.

You can add salt according to your preference. Begin with 1 tsp. Mix it up to taste, and then increase the amount you need. The amount I added was one teaspoon in total. Keep the salsa chilled until ready for eating. Mix to distribute the flavor and juices before serving.
