You all know that I am obsessed with meatballs. They are so simple, delicious, and something I’m always hungry for. When I received a pound of ground chicken from Instacart a few weeks back, I knew what I would make with it: Chicken Parmesan Meatballs. Although ground chicken is not my favorite, I can’t go wrong with meatballs. Parmesan, a few herbs and spices and plenty of Parmesan transformed the bland ground chicken into something truly delectable. For the win, meatballs!

Don’t worry, though I didn’t order the ground chicken, it was still purchased. 😉

This recipe for Chicken Parmesan Meatballs will be a great one to remember. This simple and delicious meatball recipe can be used with any ground meat.

CAN I MAKE THE MEATBALLS IN A REFRIGERATOR?

If you prefer to bake the meatballs in an oven, line a baking sheet using parchment paper. Bake for 20 minutes, or until internal temperature reaches 165°F. Baked meatballs won’t get the same browning as those made in a skillet. Additional flavor can be obtained from the browned exterior.

CAN I FRESH THE CHICKEN MEATBALLS IN A FREEZE?

You can freeze meatballs cooked or uncooked. To prevent meatballs from sticking together, place them on a baking sheet lined with parchment paper. Once the meatballs have frozen solid, please place them in a zip-top freezer bag for long-term storage (about three months).

Cook meatballs are frozen raw by letting them thaw at room temp for 30 minutes and then cooking in a skillet as per the instructions below.

You can cook frozen meatballs by placing them in a hot pasta sauce right from the freezer. Once they are done cooking, heat the sauce until the meatballs are cooked through.

CAN I USE A DIFFERENT TYPE OF GROUND MEAT

Yes. Parmesan and herbs are so versatile that they can be used with almost any kind of ground meat. It can be used with beef, pork, turkey, and even beef.

CHICKEN PARMESAN MEATBALLS

This easy recipe for Chicken Parmesan Meatballs makes a great weeknight meal! You can substitute any ground meat for this delicious and quick dinner.

INGREDIENTS

CHICKEN PARMESAN MEATBALLS

  • 1/2 cup breadcrumbs ($0.13)
  • 1/3 cup grated Parmesan ($0.59)
  • 1/4 teaspoon garlic powder ($0.02)
  • 1/2 tsp dried Basil ($0.05)
  • 1/2 tsp dried Oregano ($0.05).
  • 1/4 tsp salt ($0.02)
  • 1/4 teaspoon freshly cracked black pepper ($0.02)
  • 1 lb. Ground chicken ($3.29)
  • 1 large egg ($0.23)
  • 2 Tbsp of cooking oil ($0.08)

SERVING

  • 12 oz. pasta ($1.00)
  • 1 24oz. jar pasta sauce ($2.09)

INSTRUCTIONS

  • Mix the breadcrumbs with the seasoning first. Mix the breadcrumbs, Parmesan grated, Basil, Oregano and salt in a small bowl.
  • In a large bowl, add the ground chicken. Next, add the seasoned breadcrumbs mixture and the egg. Mix the ingredients with your hands until they are well combined.
  • Make meatballs from the mixture, approximately 1-1.5 Tbsp per each. There should be around 20 meatballs.
  • Heat 1 tablespoon of cooking oil in a large skillet over medium heat. Add half the meatballs when the oil shimmers and the skillet is hot. The meatballs should be cooked for about one minute on each side until they are golden brown and the meatballs are cooked through. Transfer the meatballs to a plate. Cook the second batch of meatballs by adding the second tablespoon of oil to the skillet.
  • Start the sauce and pasta preparations while the meatballs cook. Boil a large pot of water until the pasta is ready to be cooked. After the water has boiled, add the pasta to the pot and cook for 7-10 minutes. The pasta should be drained in a colander. Heat the sauce in a saucepan on medium heat until it is heated through. Stir occasionally.
  • After the meatballs have been cooked, add them to the saucepan of the heated pasta sauce. Stir to coat. Allow them to heat in the sauce for a few more minutes if necessary.
  • Serve the pasta cooked and drain with sauce and meatballs.
